I’ve heard so much about chia pudding but haven’t actually tried to make it until now. I browsed for ideas and used the basic scheme to make one with whatever I had at home and it turned out pretty good. This is a great option for a healthy breakfast of dessert.
Here is the recipe:
Chia Berry Mix Pudding
(Makes 2 16 oz Mason jars)
Ingredients:
– 1 cup plain greek yogurt
– 1/2 can coconut milk
– 1 banana
– 4 tbsp chia seeds
– juice of 1/4 lemon
– 3/4 cups fresh or frozen mixed berries
– 1 tbsp maple syrup
– toppings of choice, I used almonds and coconut shreds
Directions:
1. In a blender combine greek yogurt, coconut milk, banana, lemon juice and chia seeds, blend until smooth. Pour into mason jar, set aside. Banana is used here for sweetness and flavors, lemon juice keeps the mix from browning due to banana and adds a nice tartness.
2. In a blender mix berries with maple syrup until smooth, carefully pour over the yogurt layer, sprinkle with your favorite toppings and let refrigerate for a few hours (I left it in the fridge overnight). Tadam! Super simple and delicious!
