Today I wanted to share with you this quick homemade berry jam recipe inspired by one of the Blue Apron’s meals. You probably heard me talk about Blue Apron on my Instagram since I always have a bunch of free boxes to share with friends, I also mentioned it in this post.
The other day I was craving something sweet to go along with my pancakes and remembered about this jam. It’s really easy to make and I love how sweet and tart it is at the same time. The original recipe is here. I just wanted to share these few delicious pics hence this post. I used what I had at home and substituted maple syrup for brown sugar and added some frozen blueberries.
Ingredients:
– 6 oz strawberries, medium diced
– 3 oz blueberries (I had frozen)
– 1 lemon, zested and quartered
– 2 Tbsp maple syrup
– big pinch of salt
Directions:
In a small pot, combine the strawberries, blueberries, maple syrup, lemon zest, a big pinch of salt and the juice of all 4 lemon wedges. Cook on medium, stirring occasionally, 10 to 12 minutes, or until thickened and the strawberries have softened. Remove from heat and set aside to cool for 2 minutes.
